Chickpea "Tuna" Sandwich

Vegan Chickpea ‘Tuna’ Sandwich

Serves 4

This Recipe Uses:


  • 8 slices of Promise Gluten Free Quinoa and Chia Loaf
  • 2 cups of rinsed canned chickpeas
  • 2/3 of a cup of diced dried apricots
  • 1/3 of a cup of vegan mayonnaise
  • 1/3 of a cup of diced red onion
  • 1 teaspoon of Dijon or grainy mustard
  • 2 tablespoons of chopped fresh dill
  • 1 teaspoon of lemon juice and 1/2 a teaspoon or so of lemon zest
  • Salt and pepper


  • Put all the ingredients together in a bowl and mash together to achieve the desired texture.
  • Serve with lettuce and your choice of fresh herbs on Promise Quinoa and Chia Loaf.
