- 8 slices of Promise Gluten Free Quinoa and Chia Loaf
- 2 cups of rinsed canned chickpeas
- 2/3 of a cup of diced dried apricots
- 1/3 of a cup of vegan mayonnaise
- 1/3 of a cup of diced red onion
- 1 teaspoon of Dijon or grainy mustard
- 2 tablespoons of chopped fresh dill
- 1 teaspoon of lemon juice and 1/2 a teaspoon or so of lemon zest
- Salt and pepper
- Put all the ingredients together in a bowl and mash together to achieve the desired texture.
- Serve with lettuce and your choice of fresh herbs on Promise Quinoa and Chia Loaf.
