French Toast with Apple, Maple Syrup & Cranberries

Ingredients

For the apple, maple syrup and cranberry topping:

  • 3 Cortland apples, cored and sliced (Spartan and Empire apples are also great options for cooking)
  • 1 cup fresh or frozen cranberries
  • Juice of 1/2 a lemon
  • 2 tablespoon of brown sugar
  • 2 tablespoon maple syrup
  • 1/2 teaspoon ground cinnamon

For the French toast:

  • 1/2 cup of milk or enriched soy milk
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 8 slices of Promise Gluten Free Brioche Loaf
  • 1 tablespoon of unsalted butter, at room temperature

Preparations

For the apple, maple syrup and cranberry topping:

  • Place the rack in the middle of the oven. Preheat the oven to 180°C (350°F). Grease a 20-cm (8-in.) square baking pan – a Pyrex baking dish will work nicely.
  • In a bowl, combine all of the ingredients for the apple and cranberry topping.
  • Bake in the oven for 30 minutes or until the apples are cooked through.

For the French toast:

  • While the topping is in the oven, whisk together the milk, brown sugar, eggs and vanilla in a large bowl.
  • Heat a non-stick pan on medium-low heat. Melt half of the butter.
  • Dip each slice of bread one at a time in the egg mixture, allowing it to soak in.
  • Place two slices of bread at once in the pan. Brown each side for 2 minutes, flipping with a spatula.
  • Serve the French bread with the apple and cranberry topping. Drizzle with maple syrup or honey, if desired.
