Crunchy “Green Goddess” Sandwich

This Recipe Uses:

Ingredients

For the “green goddess” filling:

  • 400 g container of light or regular ricotta cheese
  • 1/4 cup store-bought or homemade pesto
  • 1/2 package firm or extra firm tofu, crumbled
  • Zest and juice of 1/2 a lemon
  • Salt and pepper

For the sandwich:

  • 8 slices of Promise Gluten Free Soft White Loaf
  • 2 Lebanese cucumbers, sliced
  • 4 lettuce leaves
  • 1 avocado, sliced
  • Your choice of fresh herbs or microgreens (thyme, mint, basil, tatsoi, alfalfa, etc.)
  • Olive oil

Preparations

For the “green goddess” filling:

  • In a bowl, combine all of the filling’s ingredients. Set aside.

For the sandwich:

  • Heat a pan drizzled with olive oil and toast one side of the bread for around 3 minutes until it is well toasted and crusty. The toasted side needs to be on the inside of the sandwich to give it its crunchy texture.
  • Spread the filling, lettuce, cucumber, avocado and herbs/microgreens on the toasted side of the bread. Fill generously for the best result. Close and serve.
